Bombay toast sandwich recipe is a very filling and delicious treat for all sandwich lovers like me:) A quick and easy mashed potato filling is spread on a green chutney coated bread, then topped with capsicum, tomato and onions, sandwiched with another butter laden bread, toasted to perfection is a real bliss on a cold day! When served with piping hot tea or coffee, it is just wonderful.

To make Bombay masala toast recipe you need very simple ingredients like potato, tomatoes. If you have green chutney in hand this Bombay toast recipe is very quick to put together. Here I have toasted the sandwich in a sandwich maker, you can toast in a tava or even a panini press or grill for more crisp sandwich.

You can also use aloo gobi, potato fry or any leftover potato dry curry as filling.

Serve Bombay toast sandwich with coffee or tea, if serving for toddlers and kids, pair this sandwich with a healthy milkshake for filling breakfast or snack!

Bombay masala toast sandwich recipe with step by step photos.

1. Green chutney: Grind together 1 cup tightly packed cilantro leaves, 1/2 cup mint leaves, 1 small piece of peeled ginger, 2 green chilies, 1 tablespoon lemon juice, cumin powder, salt and chaat masala powder. Make a thick spread like chutney, not very watery one.

2. In the mean time boil 2 large potatoes. Peel and mash the potatoes very well. Heat 2 teaspoons oil in a kadai. Temper with 1/2 teaspoon cumin seeds, 1 slit green chilli. Add mashed potatoes, salt and garam masala. Saute for 5 minutes till the raw smell of garam masala goes off. Transfer to a bowl.

3. Take a bread slice and trim the edges if you prefer. Apply salted butter on one side liberally. Apply green chutney and spread well.

4. Spoon in some mashed potatoes and spread well. Top with sliced tomatoes, capsicum and onions, Sprinkle some chaat masala powder. Take another slice of bread slice and apply butter on both sides.

5. Toast the prepared sandwich in a sandwich maker or tava.

6. Serve masala toast sandwich hot with tea/coffee/milkshake.

Ingredients

  • For sandwich:
  • 10 bread slices
  • Soft salted butter
  • 4 tablespoons green chutney
  • 1 large tomato thinly sliced
  • 1/2 green bell pepper thinly sliced
  • 1 onion thinly sliced
  • 2 large potatoes boiled and mashed
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon garam masala powder
  • 1 green chilli
  • Salt
  • 1/2 teaspoon chaat masala powder
  • For green chutney:

  • 1/2 cup tightly packed mint leaves
  • 1 small piece ginger peeled

Notes

1. You can add onions while sauteing potatoes.
2. You can even use spicy red chutney instead of green chutney
